Watermelon and feta salad

Summer means watermelon and lots of it! I love to serve this beautiful and tasty dish when I entertain in the summer. Fresh and healthy, it is the perfect side dish for any summer party! 


Ingredients

  • 4 cups watermelon, cubed or balled

  • 1/2 cup feta cheese, crumbled

  • 1/4 red onion, thinly sliced (optional)

  • 1/4 cup fresh mint leaves, torn or chopped

  • 1–2 tbsp olive oil

  • Juice of 1/2 lime (or lemon)

  • Salt and black pepper, to taste

  • Optional: a drizzle of balsamic glaze or honey for extra depth


Instructions:

1. Prepare the Ingredients:

  • Cube or ball the watermelon and crumble the feta.

  • Thinly slice the red onion and chop the mint.

2. Assemble the Salad:

  • In a large bowl or on a serving platter, layer watermelon, feta, red onion (if using), and mint.

3. Dress It:

  • Drizzle with olive oil and lime juice.

  • Season lightly with salt (feta is salty) and black pepper.

  • Optional: finish with a drizzle of balsamic glaze or honey.

4. Serve Immediately:

Best served cold and fresh.
