Avocado toast

You can call me what you want, but I just LOVE avocados! Let’s face it, not everything that’s good for you is delicious, and vice versa. But these beautiful fruits fit both bills, and I can’t get enough of them! Avocado toast is an almost-daily go-to for me (I prefer to use gluten free bread). For extra protein and healthy fats, you can absolutely lay an egg or two on top of this toast — amazing!

Ingredients

  • 1 ripe avocado

  • 2 slices of bread (sourdough, whole grain, rye—your choice)

  • Salt and black pepper to taste

  • Optional toppings:

    • Cherry tomatoes (halved)

    • Red pepper flakes

    • Olive oil or lemon juice

    • Poached or fried egg

    • Microgreens or arugula

    • Everything bagel seasoning


Instructions:

  1. Toast the bread until golden and crisp.

  2. Mash the avocado in a bowl with a fork. Season with salt, pepper, and a squeeze of lemon juice if desired.

  3. Spread the avocado mixture onto the toasted bread.

  4. Add toppings of your choice—try cherry tomatoes and red pepper flakes for a fresh kick or a poached egg for extra protein.
