homemade Ginger soda
Ginger has so many health benefits, both short and long term. I love making this soda for a bubbly treat year round but especially in the spring and summer. It settles tummies, both big and little, and is such a refreshing drink that’s way healthier than anything canned. You can adjust the syrup amount to suit your sweet tooth.
Ingredients
1/4 cup fresh ginger, peeled and grated
2 cups water
1/4 cup honey or sugar (adjust to taste)
1 tablespoon lemon or lime juice (optional, for brightness)
Sparkling water or club soda (chilled)
Ice cubes
Fresh mint or lemon slices for garnish (optional)
Instructions:
Make the ginger syrup:
In a small saucepan, combine the grated ginger, water, and honey/sugar.
Bring to a simmer and cook for about 10–15 minutes.
Remove from heat, strain out the ginger using a fine mesh strainer, and let the syrup cool.
Assemble the soda:
Fill a glass with ice.
Add 2–4 tablespoons of the cooled ginger syrup (to taste).
Top with chilled sparkling water.
Add a squeeze of lemon or lime juice if desired.
Stir gently and garnish with mint or a lemon slice.
