homemade Ginger soda

Ginger has so many health benefits, both short and long term. I love making this soda for a bubbly treat year round but especially in the spring and summer. It settles tummies, both big and little, and is such a refreshing drink that’s way healthier than anything canned. You can adjust the syrup amount to suit your sweet tooth.

Ingredients

  • 1/4 cup fresh ginger, peeled and grated

  • 2 cups water

  • 1/4 cup honey or sugar (adjust to taste)

  • 1 tablespoon lemon or lime juice (optional, for brightness)

  • Sparkling water or club soda (chilled)

  • Ice cubes

  • Fresh mint or lemon slices for garnish (optional)

Instructions:

  1. Make the ginger syrup:

    • In a small saucepan, combine the grated ginger, water, and honey/sugar.

    • Bring to a simmer and cook for about 10–15 minutes.

    • Remove from heat, strain out the ginger using a fine mesh strainer, and let the syrup cool.

  2. Assemble the soda:

  • Fill a glass with ice.

  • Add 2–4 tablespoons of the cooled ginger syrup (to taste).

  • Top with chilled sparkling water.

  • Add a squeeze of lemon or lime juice if desired.

  • Stir gently and garnish with mint or a lemon slice.
